ADVICE

To make delicious gluten free cannelés with tige nuts, it is recommended to prepare the dough the day before. The more it rests, the more successful the cannelés are.

You can use another plant-based milk if you don’t have time to make your homemade chufa horchata.

Hochata de chufa in Valencia Spain

Organic extra fine tiger nut flour

Split the vanilla pod in half and extract the seeds

Put the vegetable milk, sunflower oil and vanilla (pod + seeds) in a saucepan

Heat over low heat until boiling

Turn off and infuse the vanilla for 30 minutes in the tigernuts milk (horchata de chufa)

Meanwhile, mix the flour and sugar in a bowl

Add the eggs while whisking to obtain a thick paste

When the mixture is homogeneous, add the hot milk while stirring. The batter has the consistency of pancake batter

Let cool to room temperature

When the dough is cold, add the rum and remove the vanilla pod

Put the dough to rest in the fridge for at least 1 hour. The best is to prepare it the day before. The more it rests, the more successful they are

Preheat Th8 oven (240 ° C) for 15 minutes

Bake the mold garnished with the canelés dough for 50-60 minutes

Take the canelés out of the oven and wait for them to cool before unmolding them
