150g de buckwheat flour
50g de tiger nut flour
50g de lupine flour
50g de sesame seeds complet et grillé
2 cs blond psyllium
2 cc de guar gum
25g de buckwheat sourdough ou levain de quinoa
3 cs de cider vinegar
2 cs de vegetable oil pressée à froid
440g lukewarm water

Marion’s bread with vitalizer and tiger nuts

It is a gluten-free, low glycemic index bread. It has few lectins and is suitable for people who are allergic or suffer from bloating.

The recipe

Mix all the flour, add the psyllium, the guar, the salt and the buckwheat sourdough.
Once well mixed, make a hole in the middle of the flour mixture, and pour the vinegar and oil into this hole. Pour in lukewarm water (like a hot bath), to check, put your finger in the carafe. It must not burn.


Mix vigorously as you saw Marion do on the video.

Add the sesame seeds and mix well.

La consistance ne doit pas être trop dure. Si besoin ajoutez un petit peu d'eau.

Attention, si vous prenez une levure chimique sans gluten, le pain aura tendance à lever beaucoup trop et une fois cuite il risque de retomber. De même, soit vous prenez la fibre de psyllium et vous en mettez 2 cuillères à soupe bombée, mais si vous achetez de la farine de psyllium, il faudra n'en mettre qu'une cuillère à soupe. Je vous préviens, car cela m'est arrivé et le résultat était moins bien avec 2 cuillères à soupe.


The lifting

Grease the cake pan with coconut fat, pour the bread dough into the pan and spread it evenly. Pour more than half of hot water into the Vitalizer tank. Place the cake pan on the sieve. Cover and let rise for 1 to 2 hours, with the heat off of course.


The cooking

Light the fire and count an hour from that point.

At the end of this time, take the bread out of the Vitalizer and unmold when it is cold.


The tasting

I advise you to cut thin and regular slices and toast them in the toaster. As the dough is quite moist it will take longer to toast. It's up to you to see how you like it.
