How to use the tiger nut pulp in your horchata de chufa? In other words the pulp of your tiger nut drink?

Here is a Spanish recipe made from tiger nut pulp known as okara, made from the famous Valencian drink horchata de chufa.

If you want to make this recipe without having made the drink, you can use our whole tiger nut flour known as classic organic tiger nut flour available on our eshop.

Start beating the eggs and sugar until you get a soft mixture.

Add the flour, salt, baking powder, yogurt and oil and beat at minimum speed for a few seconds.

Add the tiger nut pulp, grated lemon and mix with a spatula.

Pour the dough into the greased mold and bake it in an oven preheated to 180 ° C for about 30 minutes. Let cool and serve sprinkled with powdered sugar.
