What to do with the pulp (okara) after making your horchata de chufa drink?

Gluten free madeleines of course!

This recipe was made without yeast but you can add 1/2 bag if you want

A few raspberries (optional)

= 14 large madeleines

 

You can replace the tiger nut drink okara by our classical or extra-fine tiger nut flour.

Preheat your oven to 200 °

Keep the raspberries apart for the end

Beating egg whites

Incorporate the yolks with all the other ingredients in a blender and mix them slowly at the beginning and increase the speed until obtaining a homogeneous result.

Gently fold the mixture into the egg whites and mix gently with a spatula.

Pour the result into previously oiled madeleine molds.

You can add a raspberry per madeleine on top before baking if you wish.

Bake for 5 min at 200 ° C then lower the thermostat to 150 ° C and leave for 10 to 15 minutes more.
